Life with kids is never boring, especially around St. Patrick’s Day, which is one of my kid’s favorite holidays! They look forward to it every year because they get to wear green clothes (and pinch those who don’t), decorate the house with shamrocks, rainbows, and pots of gold, and eat yummy green foods at every meal.

Speaking of green foods, I try to make our St. Patrick’s Day meals fun, delicious, and as healthy as I can. This year, we’re having green smoothies (recipe below), green spinach muffins, and homemade yogurt for breakfast. There will be zucchini soup and broccoli bites for lunch, veggie straws and green apples or pears for snack, and then for dinner, we’ll have cilantro lime chicken with avocado salsa, baked asparagus, and a spinach salad with some yummy mint chocolate chip ice cream for dessert.

Green Smoothies You Say?

Yes… green smoothies… for breakfast. 

I’ve never been a huge fan of green smoothies, except the ones that are green because they contain spinach. Spinach, I can do, but when you start adding in kale and other leafy greens, it starts getting too thick and veggie-like for me. I prefer sweet, smooth fruit smoothies.

Seeing how I’m always trying to find little ways of getting extra nutrients into my family’s diet, with St. Patrick’s Day approaching, I decided to to come up with a green smoothie recipe that was festive and healthy. In the past, I’ve read about the nutritional benefits of seaweeds and plant algeas (sounds weird, I know) and how it’s a good idea to include them into your diet. Seeing how these aquatic greens are rarely included in my diet (except for the seaweed my sushi is wrapped in), I figured a St. Patrick’s Day green smoothie was the perfect time to sneak these superfoods in without affecting the flavor or texture of the smoothie too much.

After a few attempts at creating a green, tasty smoothie, I finally landed on the St. Patrick’s Day green smoothie recipe below. Not only does it contain aquatic greens, but it’s healthy, it tastes good, and it’s easy to make.

This St. Patrick’s Day green smoothie is SO easy to make, especially if you have smoothie packs on hand. Smoothie packs are premade bags that contain all of your ingredients for a smoothie (minus your liquids). I got this idea from my friend Kristen who blogs over at Live Simply.

Once (sometimes twice) a year, I head to the grocery store to buy fruit that’s on sale or in bulk. I bring it all home and get busy making smoothie packs to store in the freezer. Then, whenever we feel like having a smoothie, we pull out a smoothie pack and add in any other additives (like fresh fruit, liquids, greens, or herbs) we want, and blend away. Taking a little time to prep these smoothie packs ahead of time makes the actual process of making a smoothie less time consuming.

  1. Combine all ingredients together in a high power blender (such as a VitaMix), and blend until smooth.
  2. Top with sliced strawberry, and enjoy!

I told you that would be easy!

Oh, and did I forget to mention that my kids LOVE this smoothie? Now that’s saying something! My kids have an aversion to green food… except on St. Patrick’s Day. Do you think I can trick them into thinking every day is St. Patrick’s Day? I think I’ll try it and let you know how it goes.

    Thanks so much for this article Meagan! I am a fellow health nut/ herbalist junkie and as much as I like shamrock shakes, I really needed a healthier alternative. This way my kids and I are still having fun with the festivities, but not feeling so guilty about it.
